The high proportion of Chardonnay in this assemblage is expressed in the sense of freshness and verve. The "fruit drop" and red fruit (cooked strawberry, redcurrant) aromas complete and amplify it. The cherry on the cake is provided by discreet notes of vinosity developing at the finish. It makes an ideal apéritif of course (thanks to the appeal of Champagne, together with its amazing colour…) but this Champagne is no mere curiosity: it will pleasantly surprise as an accompaniment for red meats (including game, for the most adventurous) and fruit desserts. 85% Chardonnay 15% Pinot Noir and Pinot Meunier (vinified red).
